SPELT in particular has often been crossed with WHEAT to increase yield. That is why we at M. Reich use a very special type of ancient spelt: Ebner's red grain! Ebner's red grain does not contain any genetic wheat components and therefore has all the classic advantages of high-quality ancient spelt. The high protein content in particular makes this type of spelt so valuable.
