This process involves carefully washing the starch out of the roots, followed by multiple filtration steps to ensure maximum purity. Finally, the kuzustarch is gently air-dried.

Preparation:

To thicken 500 ml of liquid, take one heaped tablespoon of kuzu starch. First crush the starch with a spoon and then stir it into a little cold water. Add the mixture to your liquid and bring to the boil. Stir continuously and allow the mixture to boil briefly once.
